Cous- Cous!

When Chris was on his mission, dinner appointments rarely existed and the cost of his mission was very high! He learned to make couscous and would make a big batch and it would feed them for days! Chris likes to make it and the girls love it!! It was on the menu last month, but was skipped over and the girls were very disappointed.

Here is his recipe:
1 zucchini
1 yellow squash
1 eggplant
1 lb cooked smoked sausage
1 pound cooked chicken tenders
1 can garbanzo beans
2 cans Italian stewed tomatoes
2 garlic cloves
1/2 tsp nutmeg
1 tsp Jambalaya seasoning
(if you don't have this you can use a mix of paprika, cayan pepper, salt and pepper)

Slice vegetables 1/2 inch thick. The cut eggplant you will want to then quarter. Put a little bit of olive oil in the bottom of the pan and saute the vegetables until soft. Add cooked meat, stewed tomatoes, garbonzos and seasoning to the vegetables. Cook until everything is warm all the way through. Serve over couscous pasta(follow cooking instructions on the box).
*For those of you who know me well - yes I did eat it - even the eggplant!

YOU ate cous-cous? With all those vegies? I am so proud of you. It sure looks yummy to me. When should we be up?

This sure looks yummy, not sure if I am brave enough to try it, but it looks like something Kev would love.
